                                    Baked Pasta w/Tomatoes, Cream, & Five Cheeses


Serves 8


1 1/4 tsp. of salt, plus more for pasta water

1 lb. pasta - your preference

2 cups Christiansen's heavy cream

1 cup canned pureed tomatoes

1/4 pound of thinly sliced mozzarella

1/2 cup freshly grated Pecorino Romano cheese plus more for garnish

1/2 cup coarsley shredded (1 1/2ounces) Fontina cheese

1/4 crumbled Gorgonzola cheese (1 1/2 ounces)

2 tbsp ricotta cheese

6 fresh basil leaves, coarsely chopped

4 tbsp. unsalted butter,cut into small pieces

1/4 cup very thin sliced scallions for garnish


1) Heat oven to 500 degrees. Bring a large pot of salted water to a boil. Add pasta, and cook for 4 minutes. Drain.

2) While pasta is cooking, place cream, tomatoes, cheeses, salt and basil in a large bowl. Stir to mix. Add cooked pasta to cheese mixture and toss to mix.

3) Divide into 6-8 stoneware dishes. Dot w/ butter and bake untill bubbly and brown on top

4) Take out of oven and sprinkle with Pecorino Romano cheese, scallions, 1 basil leaf on top and serve.
